Herb and Feta Crusted Salmon

Ingredients

Scale

900g salmon fillet, scales removed, rinsed carefully

salt & pepper

1/4 cup homemade mayonnaise

1.5 cups crumbled feta

1/4 cup fresh chopped parsley

2 Tbsp fresh chopped dill

1 tsp finely grated lemon zest

1 clove garlic finely chopped

lemon wedges for serving

Instructions

1. Pre-heat oven to 200C (fan forced. Line baking tray with baking paper.

2. Arrange fish on tray flesh side up, season with salt and pepper.

3. Spread mayonnaise over fish.

4. In a medium bowl toss the feta, parsley, dill, lemon zest and garlic to combine, leaving the feta in crumbles.

5. Bake salmon until just cooked through, so the fish flakes off with a fork (about 25 mins). Serve with lemon wedges and a salad of choice.

 

 

Notes

High in omega-3 fats (good fats!).
