Homemade Baked Beans

Ingredients

4 Tbsp macadamia nut oil

4 cloves minced garlic

1 Tbsp Dijon mustard

2 tsp smoked paprika

1 tsp onion powder

2 x 400g cans cannellini beans, rinsed and drained

680g passata

2 tsp apple cider vinegar

2Tbsp maple syrup

1/2 tsp sea salt

1/2 cup vegetable or chicken stock

Instructions

1. Preheat frypan to medium heat on stove. Add the oil and garlic and saute until golden and fragrant.

2. Add passata, paprika, onion powder, mustard, apple cider vinegar, stock, sea salt and maple syrup. Combine well and simmer for 5 minutes.

3. Add beans to tomato mixture and stir well to combine. Simmer a further 5 minutes until the sauce thickens.

4. Serve warm with steamed greens.
