Almond Butter Bread

  1. 1 cup almond nut butter
  2. 4 eggs
  3. 1 tsp baking soda
  4. 1 pinch sea salt
  5. flaked almonds to garnish
  1. Pre-heat oven to 160C.
  2. Line a small loaf pan with baking paper (20x10cm).
  3. Whisk the almond butter and eggs together until smooth.
  4. Then add salt and baking soda and whisk in gently.
  5. Pour batter into prepared loaf pan and sprinkle the top with flaked almonds.
  6. Bake for about 30 mins or so.
  7. Bread is cooked when skewer comes out clean.
  1. This is a great substitute for bread, and it is gluten-free, grain-free, high in protein and good fats.
  2. Serve with a scrape of ricotta cheese and a few slices of avocado and fresh ripe tomato! MMmm!
  3. Makes a tasty breakfast with poached eggs.
