Easy Lentil Patties with Homous

  1. 3 free-range eggs, beaten
  2. 1 425g can organic lentils (pre-cooked)
  3. 2 small zucchini, grated
  4. 1/2 tsp ground turmeric
  5. dash of chilli flakes
  6. 2/3 to 1 cup coconut flour (add enough to bind the mixture)
  7. dash of ground pepper
  1. Add eggs to a bowl and beat.
  2. Add all remaining ingredients and combine.
  3. Make into patties and cook in macadamia nut oil or coconut oil in a pan, until golden brown.
  4. Takes only a few minutes to cook.
  5. Serve with steamed vegetables and freshly made homous.
  1. Makes about 10 medium sized patties.
