Nuts About Porridge

  1. 25g unsalted raw walnuts
  2. 40g unsalted almonds
  3. 2 Tbsp ground flaxseed
  4. dash of cinnamon
  5. 3 eggs
  6. 50 ml almond milk
  7. 1/2 banana
  8. 1 Tbsp almond nut butter
  9. pumpkin seeds & cherries to garnish
  1. In a processor or Nutribullet, place nuts, flaxseed, cinnamon and process quickly so mixture is a bit chunky still.
  2. In a separate bowl, whisk the eggs & milk together until well combined.
  3. In another small bowl, mash together the banana and nut butter until creamy.
  4. Pour the nut mix into the egg mix and stir well to combine.
  5. Add in the banana and nut butter.
  6. Place all ingredients into a small saucepan and stir over a low heat constantly until thicker and heated through. The mix can stick if left unattended.
  7. Remove from heat when the desired consistency.
  8. Serve with cherries or berries and a pinch of pumpkin seeds.
  1. Serves 2 - this is a delicious low carb, high fibre, moderate protein breakfast that will sustain for hours!
