Pumpkin Protein Pikelets

  1. 1 scoop vanilla protein powder
  2. 2 Tablespoons pumpkin puree
  3. 2 Tablespoons almond meal
  4. 2 egg whites
  5. 1/4 tsp baking powder
  6. 1 tsp coconut oil (or macadamia nut oil)
  7. 1/4 tsp vanilla extract
  8. dash of nutmeg
  1. Place all ingredients in the blender & mix until it forms a batter.
  2. Spray pan with a non-stick olive oil spray.
  3. Cook pikelets on a pre-heated frypan or grill plate, until golden brown.
  1. Recipe makes 3-4 pikelets.
  2. Great pre or post-workout meal, loaded with top quality protein & low GI carbs for recovery!
