¾ cup almond meal
½ cup pitted, chopped dates
1 tsp vanilla essence
Zest of ½ lemon
1 Tbsp lemon juice
½ cup coconut
Place all ingredients in food processor and pulse until blended.
Make into small balls and store in a container. Refrigerate.
