3/4 cup almond meal
1/2 cup pitted, chopped dates
1 tsp vanilla essence
Zest of 1/2 lemon
1 Tbsp lemon juice
1/2 cup coconut
Place all ingredients in food processor and pulse until blended.
Make into small balls and store in a container. Refrigerate.
