Carrot Cake Protein Balls

Ingredients

2 cups shredded carrot 15 dates 1/2 cup sultanas 1/2 cup walnuts 2-3 Tbsp cashew nut butter 1 tsp grated ginger 1 cup vanilla protein powder 2 cups almond meal 1 tsp cinnamon shredded coconut for rolling

Instructions

Blend all ingredients in food processor until smooth.
Chill mixture in freezer for 30 mins, until it is stiff enough to form balls.
Roll balls in shredded coconut.
Store in airtight container in freezer.

Notes

Enjoy 2 at a time for a healthy protein snack!
